当醸造所は、NYダイナーをコンセプトにしたレストランに併設しており、国籍や性別・年齢を問わず、様々な方で賑わっております。多様な人種や民族がひとつの場所で溶け合い、新しい一つの文化が形成される人種のるつぼのように素材の多様性を最大限に活かし、自由な発想で新しい味を創り上げる醸造所として、日々クラフトビールの醸造に励んでおります。
Created as a joint brewery/restaurant and based on the concept of a NY diner, Craftman Umami is always crowded with people of all nationalities, genders, and age. The brewery makes use of the new culture created from the melting-pot of people visiting, and brings liberal ideas and new flavors into the craft beer brewed on a daily basis.
